Key Lime Pie: cool summer dessert
This is an easy pie to make and so good when it’s hot and sticky outside! The best key lime juice I’ve found is available from www.kingarthurflour.com. They also have a fabulous selection of baking supplies and consumables which are difficult to find in most markets and are reasonably priced. Their staff is very pleasant and helpful and their service is exceptional.
Butter pie crust recipe for a single 9″ crust pie
1 can condensed milk
4 eggs separated
6 tablespoons sugar
.5 teaspoon cream of tartar
half cup of key lime juice
Bake single pie crust according to recipe and cool
Beat 1 egg white until stiff and fold into milk, key lime juice and yolks
Beat remaining 3 egg whites with cream of tartar and sugar until stiff
Pour juice mixture into prepared, baked pie shell
Spread whipped egg whites over top and bake until egg whites are golden brown at 350 degrees, about 40 minutes.
Cool and enjoy!
